- This is a Dark Red Norland potato tuber that is infected with late blight (the disease that caused the Irish Potato Famine), caused by the pathogen Phytophthora infestans. If you start peeling a potato and see this, consider yourself lucky that the soft rot hasn't set in yet. Although this disease looks bad (it is bad), what makes it particularly bad is that it allows other pathogens, such as the bacterium Erwinia carotovora, to get in and turn the potato to mush. Plus, the soft rotter Erwinia also makes the potato smell really bad.
